Freeze dried fruit is available as whole fruit, fruit mixes, chopped fruit nibs and powders. Freeze drying preserves the natural shape, colour and goodness of the fruit - perfect for brightening up bakes and adding to cereals.
So often figs are hard and treacle-brown. These are pale and soft enough to tear by hand. I highly recommend them to anyone who likes a delicately flavoured fig and whose jaws ache from chewing whole foods!
I like to stock up on good quality coconut flour. You need about a quarter of what you would use with other flours as it's very absorbent, and is a good source of fibre.
