Mixed Red Berry Scotch Pancake
Ingredients
- 200g plain flour gluten free flour may also be used.
- 1 tbsp baking powder
- pinch of salt
- 1 tbsp organic cane sugar
- 1 tsp ground cinnamon
- 1 large egg or egg replacement
- 300ml milk of your choice
- 30g Red berry mix
- vegetable oil, to fry
Method
Add the dry ingredients to a mixing bowl. (except red berries) Beat the egg and milk into the mixture with a handheld or electric whisk. Finally mix in red berry nibs.
Heat a non-stick frying pan over a medium heat and brush the pan with some oil.
Pour in the batter to make a pancake, remember do not make to big or thin. Fry for about 1 min until the edges of the pancake are firm and bubbles have started to appear on the surface. Turn over and fry for another 30 secs till golden on both sides.
Top your stack of pancakes, serve with fresh fruits.
