Peanut and Red Berry Biscuits
Preheat oven 180 degrees Gas 4
Cream together peanut butter and coconut sugar until thick and pale in colour.
Stir in egg, then sifted flour a little at a time until all the ingredients are incorporated.
Add in nuts and red berry mix, make sure you mix the ingredients in well, keep a few nuts back to top the biscuits before cooking.
Place rounded teaspoonfuls onto a lightly greased baking tray and press with fork to flatten, top with a few extra nuts.
Cook 350F/180C for 20 minutes until golden brown. Fan oven at 160C for 12-14 minutes.
Leave to cool and place on a baking rack.
Store in air tight container for 5-7 days.
NB nuts may be changed if desired.
