King Prawn Chow Mein
Ingredients
Serves 2-4
750g King Prawns or 2-4 Chicken Breast or 200g-400g of Tofu
250g Egg Noodles
1 onion
1 teaspoon garlic paste
1.2 teaspoon ginger powder
1/2 teaspoon of chilli powder
1 small red pepper
6 florets of broccoli
1 courgette
100g Beansprouts
1/2 tablespoon lemon juice
3-4 tablespoons soya sauce
3-4 tablespoons hoi sin sauce
A wedge of lemon or lime and a few dry roasted peanuts if desired
Method
In a pan cook off noodles as stated on the packet and then drain, leave to one side.
You may exclude meat and meat substitute and just simply enjoy a vegetable chow mien.
Prepare king prawns or chop up chicken breast or tofu.
Peel and chop vegetables as required and chop into thin strips all about the same size.
In a large pan or wok add a little oil if desired and add onion, garlic, chilli and ginger powder cook until soft.
if using chicken breast add to the pan now and seal the meat until it turns white.
Add in all vegetables except beansprouts and stir fry for around 4-6 minutes until they soften, add lemon juice, hoisin and soya sauce. If starts sticking to the pan add a little water.
Stir in king prawns or tofu heat through finally add cooked noodles and beansprouts. Adjust seasoning, add a little more soya sauce if desired and serve. Squeeze over lemon or lime if desired. Top with a few roasted peanuts...
May be eaten cold the following day, makes are great packed lunch...
