Almond Paste

Almond Paste

300g Ground Almonds
150g Icing Sugar
150g Caster Sugar
4 egg yolks free range
1 tablespoon Lemon juice
1 teaspoon almond essence

Method

Sieve icing sugar
Place both sugars and almond into a large mixing bowl mix well.
Stir in egg yolks, lemon juice and almond essence and mix until it forms a paste.
Knead for about 1 minute and then wrap in cling film, leave in fridge for 15 minutes, it is then ready to use to marzipan your cake.
