Also known as rice syrup, brown rice malt and rice malt, this ingredient of Chinese origin is made by enzymic action on brown rice and, after further treatment to reduce its consistency, it is used as a sweetener.

This natural sweetener has a mellow, sweet taste. Use to sweeten drinks, desserts, as a spread, or in cooking and baking as a substitute for sugar in baking of cakes, muffins, custards and pastries. Can also be used to top yogurt, fruits or ice-cream.
