Spicy Black Turtle Bean & Cheese Burgers
Ingredients
- 200g black turtle beans
- 1 small red onion
- 2 cloves garlic
- 100g sweetcorn
- 1 slice of bread (may be gluten free)
- 75g vegan or vegetarian cheese
- 1 tablespoon hot chilli sauce
- 1 teaspoon cayenne pepper
- Himalayan Pink Salt to taste
Method
Soak, rinse and cook black turtle beans until tender then put 100g of the beans in a bowl and blend to a paste with a stick blender (or use a food blender).
Finely chop the onion and garlic and add to the mixture the mixture.
Then add all the other ingredients, including the rest of the black beans, and mix well with a wooden spoon until you have a large ball of paste. For a milder option, omit chilli sauce and cayenne and replace with a milder spice such as cumin or ground coriander. Leave to marinate to intensify flavour.
Divide the paste into 4-6 equal portions and make into patties on a well floured surface to coat the burgers. If a little dry, add some tahini.
Place on to a well greased oven tray, brush with oil and bake in the oven for 20 minutes. Alternatively, place under the grill and turn after around 3-5 minutes.
Top with vegan mayo and serve in a toasted bun, with salad, coleslaw and SavvyKraut.
