25-Minute Rye Porridge with Prunes & Golden Flax

By Rough & Ready Whole Foods  •  0 comments  •   3 minute read

Creamy rye porridge with soft chopped prunes in two cream breakfast bowls

Wholefood Tuesday

For a cold morning when you want something warm and filling, put rye flakes and chopped prunes in one pan with soya drink. The fruit softens as the porridge cooks, and a spoonful of ground golden flax gives it a creamy finish. Two bowls, four cupboard ingredients and very little washing up.

Rye flakes keep more texture than oats, so expect a gentle chew. Use rolled rye flakes rather than whole rye grains. You will need one medium heavy-based saucepan.

Ingredients

Allergens: contains rye (gluten) and soya. The rye, prunes and flax are labelled not suitable for coeliacs and packed where nuts, seeds, cereals, soya and gluten are handled. The soya drink is made in a facility that also handles nuts. This recipe is vegan as written. Check the current pack labels, especially when changing the drink.

Method

  1. Start the panPut the rye flakes, chopped prunes, soya drink and water in a medium saucepan. Stir together and bring just to the boil over a medium heat, watching so the drink does not boil over.
  2. Cook gentlyTurn the heat low and simmer for 15 minutes, stirring frequently and scraping the bottom of the pan. The prunes should soften and the flakes should be tender with a little chew. Add a splash of water if the mixture becomes too thick before the flakes soften.
  3. Stir in the flaxStir in the ground golden flaxseed and simmer for another 3 minutes, stirring. It thickens the porridge quickly, so loosen with a little water until it drops easily from the spoon.
  4. Spoon into warm bowlsDivide between two bowls, making sure each gets plenty of softened prune. Serve straight away. The prunes sweeten the porridge as they cook; taste before deciding whether you want anything else alongside.

Adjust the texture

For a softer bowl, chop the rye flakes briefly in a food processor before cooking. For a looser porridge, add a little more soya drink at the end. Another plant drink can replace the soya drink in the same quantity; check its label for different allergens.

For the next morning

Cool any spare portion promptly and refrigerate in a covered container within two hours. Eat within two days. Reheat in a small pan with extra water or soya drink, stirring until steaming hot throughout. It will thicken considerably as it stands.
