15-Minute Date & Tahini Rice-Flake Porridge

By Rough & Ready Whole Foods  •  0 comments  •   3 minute read

Warm rice-flake porridge with chopped Medjool dates, light tahini and cinnamon in two ceramic bowls

Wholefood Tuesday

For mornings when there is no time to soak anything overnight. Chopped dates soften as the rice flakes cook, sweetening the porridge without a separate syrup. Stir in a spoonful of tahini at the end for a creamy finish, then take your bowl somewhere warm.

Use rice flakes rather than whole rice. Have a small saucepan and two bowls ready. Stir the tahini well in its jar before measuring, so the oil and sesame paste are evenly mixed.

Ingredients

Allergens: contains sesame in the tahini. The rice flakes, dates and cinnamon are labelled not suitable for coeliacs and are packed in environments handling nuts, seeds, cereals, soya and gluten. Although the recipe uses no oats, it must not be treated as gluten-free. It is vegan as written. Check every current pack label.

Method

  1. Start with the datesCheck that every date stone has been removed, then chop the flesh finely. Put the dates and water into a small saucepan. Bring to a gentle simmer and cook for 2 minutes, stirring and pressing a few pieces against the side of the pan.
  2. Cook the rice flakesStir in the rice flakes and cinnamon. Turn the heat low and simmer gently for 8 to 10 minutes, stirring often, until the flakes are soft and the porridge is creamy. Follow the pack timing if it differs, and add a splash of water if it thickens before the flakes soften.
  3. Finish with tahiniTake the pan off the heat. Stir in half the tahini. Divide between two bowls and drizzle the remaining tahini over the top. The porridge thickens as it stands, so loosen with a little hot water if you prefer it softer. Serve straight away.

For a smoother bowl

Chop the dates very finely and mash them thoroughly into the water during the first step. Stir all the tahini into the cooked porridge rather than saving some for the top.

Cooking for one

Halve every ingredient and use a small pan. The cooking time stays much the same. Keep a little extra water handy, as a smaller portion can thicken quickly.

Get ahead the night before

Weigh the rice flakes and cinnamon into a covered container. Stone and chop the dates separately, cover and refrigerate. In the morning, everything can go straight into the pan in the order above. No soaking is needed.
