Cooking with lime leaves adds a citrus flavour. It's ideal for adding to quick fry dishes of vegetables, meat or fish. Lime leaves impart a gentle lemon flavour so work very well with fish dishes and are used a great deal in Thai cuisine.
Use lime leaves in Thai, Vietnamese and Indonesian curries, particularly ones based around coconut milk. The leaves are generally added whole so can be easily removed before serving.
If you choose to chop or crush lime leaves, we recommend that you crush slightly in a mortar and pestle to release the flavours and, if chopping, remember to remove the inner stalk as it can be very tough.
