Sweet Potato & Aduki Bean Burgers
Ingredients
- 1 large sweet potato
- 100g aduki beans
- 2 cloves garlic
- 1 teaspoon ground ginger
- 1 teaspoon garam marsala
- 1 finely chopped onion
- 1 handful of fresh parsley (dried is suitable too)
- 2 tablespoons of any type of flour
- 2 tablespoons of any type of breadcrumbs
- 75g sesame seeds
- 2 tablespoons of tahini
- 1 tablespoon extra virgin olive oil
Method
Peel, cook and mash the sweet potato and then add the ginger, garlic, garam marsala and chopped parsley mix together well.
Boil aduki beans until tender.
Put the aduki beans in a bowl and blend to a paste with a stick blender (or use a food blender) or mash for a more coarse texture.
Finely chop the onion, fry in a little oil and then add all the flour.
Divide the paste into 4-6 equal portions and make into patties on a well floured surface, then brush with tahini.
Mix the breadcrumbs and sesame seeds together and dip the burger into the breaded seed mixture.
Place on to a well greased oven tray, brush with oil and bake in the oven for 20 minutes. Alternatively, place under the grill and turn after around 3-5 minutes. Also perfect for the BBQ or shallow fried.
Top with vegan mayo and serve in a toasted bun, with salad, coleslaw and SavvyKraut.
