Spiced Pumpkin & Lentil Soup
Ingredients
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 1 garlic clove, crushed
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp chilli powder
- 2 tins pumpkin puree
- 150g red lentils
- 500ml stock of your choice
- 100ml thickened cream
- A pinch of ground black pepper
- Pumpkin spice
Method
- Heat the vegetable oil in a large pan and add the onion, garlic, coriander, cumin and chilli.
- Cook until the onion has softened. Add the pumpkin puree and red lentils, cover with stock and allow to simmer. Keep topping up the stock as required as the lentils cook.
- When lentils have softened completely, season with pumpkin spice, salt and black pepper and stir in cream or alternative.
- You may blend it if you want a completely smooth texture or just finish it off with black pepper and enjoy with some pumpkin bread.
